Courtney's Winter Endive Salad:
- 1 Endive (chopped)
- A Small Portion of Sweet White Onion (for taste)
- 1 Hard Boiled Egg (white only/chopped)
- 1 Handful Shaved Parmesan
- 1 Small Roma Tomato (chopped)
- 5 Green Olives (chopped)
Mix all dry ingredients- sprinkle with olive oil, balsamic vinegar, a pinch of black pepper and kosher salt- mix again, and enjoy!!! Delicious, refreshing, and healthy mmm
